This is a very easy lunch! Eggs are an excellent source of lean protein and are nutrient rich- containing 13 vitamins and minerals. Most of us can eat one egg daily as part of a healthy diet. I like cooking with eggs because they cook quickly. Serve this dish on whole grain tortillas.
Egg Tacos (serves 2)
½ green pepper, diced
2 tablespoons diced sweet onion
4 cherry or grape tomatoes, quartered
2 teaspoons canola oil
Salt & pepper, to taste
¼ cup shredded sharp cheddar
Whole grain tortillas
Crack eggs into glass measuring cup. Whisk to blend. Heat oil in a small skillet. Saute green pepper with onions and tomatoes, 3-5 minutes. Pour eggs over veggies. Cook until eggs are no longer runny, 2-3 minutes. Sprinkle with ¼ cup shredded sharp cheddar. Serve immediately on warmed tortillas with salsa.
